Lemonade Coconut Milkshakes by FamilyFreshCooking
Yield: two 8 ounce shakes
Prep Time: 1 minute
Cook Time: 1 minute
Total Time: 2 minutes
 
Ingredients
8 ounces Unsweetened Light Coconut Milk
1 tablespoon Lemon Juice (about 1 lemon), adjust to taste
5 ounces Ice
1/2 to 1 dropper full Vanilla Stevia Drops, adjust to taste ~ or your favorite natural sweetener
pinch of ground Ginger
2 ounces 1% Plain, Unsweetened Kefir
Optional Toppings
Homemade Whipped Cream
chopped Macadamia Nuts
Coconut Flake

Method
Blend all ingredients in your blender.
Notes
For adults you can add a splash of rum, vodka or spirit of your choice.
This recipe can easily be made vegan. Swap out the kefir for more coconut milk, almond milk, soy milk, etc.
Guys I made one of these today and can I just say YUM!

18.25 oz box confetti cake mix, I used Duncan Hines
2 1/2 tsp powdered sugar-free pink lemonade mix
1 cup water
1 tbsp vegetable oil
1/4 cup unsweetened applesauce
lemon zest from half of a lemon
2 drops pink food coloring (optional)
confetti sprinkles, optional
Directions:Preheat the oven to 350 degrees F.  Line cupcake tins with 24 paper liners.Stir together the water and pink lemonade powder.  Combine the cake mix, pink lemonade mixture, applesauce, lemon zest, food coloring and oil in a large bowl and with an electric mixer, mix until all the ingredients are thoroughly combined. Pour the batter into the prepared cupcake pans.  Add sprinkles if using and bake in the oven for 22 minutes, or until a toothpick inserted into the center of the cupcakes comes out clean.Cool completely on wire racks before serving.

Considering your average cupcake racks it up around 300 calories, I’ll definitely be trying this alternative soon! Aren’t they adorable?!
